WHere is a simplified interpretation of a drink featured on a new drinks list. Designed as a party-sized premix that is loaded with flavours associated with Christmas time, making it excellent for hosting a festive gathering. Reserve the remaining cordial for morning drinks, puddings, or for more rounds of bikinis.

Bikini

Yields 10 guests

To make the Clementine Cordial (produces 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

Ingredients for the Cocktail (yields 850ml, enough for 10)

400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
A few cranberries, as a garnish
Mandarin essential oil, as a final touch

Directions

For the Cordial: Put the listed components in a pot, heat until it reaches a simmer, stirring until the sugar dissolves. Then, turn off the heat and leave to reach room temperature completely. Decant to a clean bottle, cap it and store in the refrigerator, where it will keep for up to four weeks.

To make Premix: Mix all the spirits and syrup into a large bottle, allow it to infuse for one hour, then pass it through preferably using cheesecloth, so it's fully clarified.

When ready to serve: Measure 85ml from the batch mix into a cocktail shaker filled with ice, gently stirring gently for a minute to cool it down. Filter into a cold coupe glass or similar, garnish with some cranberries and complete it by giving it a quick spritz of mandarin oil over the drink.
